Ingredients
  • 1 1/2 pounds stew beef, cubed
  • 4 cups beef broth
  • 1 cup onion, chopped
  • 3 carrots, peeled and sliced
  • 1 cup celery, sliced
  • 2 large potatoes, peeled and cubed
  • 28 ounces canned tomatoes
  • 1 tablespoon sugar
  • 2 teaspoons salt, or to taste
  • 1/2 teaspoon freshly ground black pepper, or to taste
  • 1/2 teaspoon crushed rosemary
  • 1/2 teaspoon ground thyme
  • 1/2 teaspoon ground marjoram
  • 1 cup frozen peas, optional

  • Preheat oven to 250º F.
  • In a large container, add cubed meat, chopped onions, sliced celery, carrots, potatoes, beef broth and canned tomatoes. Add seasonings, cover with foil. Bake for 5 hours.
  • If desired, add peas during the last 45 minutes of cooking.
  • If the soup is too thick, add beef both until desired consistency. Freezes well.

"As title implies a hearty vegetable beef soup. Definitely recommended. As a suggestion go a little light on spices. We found them just a bit too pronounced at 1/2 tsp each."

"I browned the stew meat and put every thing my large crock put. Cut all vegetable into small cubes. 8 hours in the crock pot came out very good. Also added one more can 14 oz of stock. Had some for two nights for the 2 of us. Paul"

"tastes great, but the recipe calls for no potatoes. There looks like there is potatoes in in it(by the picture). I had to add potatoes. I would add 2 potatoes. Helps thicken it and makes it more hearty. Besides who doesnt put potatoes in vegi/beef soup? Also if you don't have a large dutch oven bring to a boil over stove and let simmer with lid on for 1 hr and simmer with lid off for 1 1/2 hrs. Thickens nice and can always add more broth if need be."
