Salmon with Puff Pastry and Pesto Recipe

Ingredients
  • 2 pieces Salmon (approximately 4 x4 inch size)
  • 1/2 Sheet of Puff Pastry (allow to thaw overnight inch refrigerator or 40 min. on counter top)
  • 1/4 cup pesto (pesto inch a jar works great)
  • 1/2 cup fresh baby spinach leaves (pre-packaged inch vegetable section)
  • 1/2 Tomato (2 slices)
  • small amount of Olive oil
Directions
Preheat oven to 375

Take the sheet of Puff Pastry and cut into 4 squares (we will only use 2 squares for this recipe).

On a cookie sheet place the 2 pieces of salmon and the 2 squares of Puff Pastry

Lightly brush top of salmon with olive oil

Salt and pepper to taste

Bake for 20 minutes - Salmon should be pink and flaky. Puff Pastry will be golden

Assemble on plate:

1. Start with the Puff Pastry on the plate

2. Spread pesto on top of Puff Pastry

3. Next layer with baby spinach leaves

4. Place Salmon on top of baby spinach

5. Top Salmon with a Tomato Slice

Salt and pepper as desired
