Tortellini with Asparagus and Prosciutto Recipe

Ingredients
  • 3 ounces prosciutto cut into thin strips (deli will slice thinly)
  • 1/4 cup chopped green onion
  • 1 clove garlic, minced (optional)
  • 1 tablespoon butter or margarine
  • 1 or more) package tortellini; cooked and drained
  • 1 tablespoon Butter, melted
  • 1/2 cup grated Parmesan cheese
  • 1 bunch asparagus, cut into 1 inch pieces
  • 1 cup heavy whipping cream
Directions
Sauté prosciutto and onion (and garlic, if desired) in butter or margarine 3 minutes until onion is tender and prosciutto lightly browned.

In bowl, toss cooked tortellini with melted butter. Sprinkle with Parmesan and cover.

In sauté pan, add asparagus tips and cream to prosciutto, cover, simmer 5 minutes stirring occasionally. Stir in tortellini mixture and serve warm.
