  • 3 tablespoons balsamic vinegar
  • 3 tablespoons sugar
  • 1 cup red wine
  • 1/4 cup minced shallots, or onions
  • 1 stick cinnamon
  • 2/3 cup chicken broth (stock)
  • 1 cup dried cherries
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 2 teaspoons lemon juice
  • 1 tablespoon unsalted butter
  • 1 pork tenderloin
  • salt and pepper to taste
Directions
  • Bring vinegar and sugar to a boil in saucepan over medium heat. Boil 5 minutes or until mixture has a glaze consistency; stir often.
  • Stir in wine, shallots, and cinnamon stick. Boil 15-20 minutes or until mixture is reduced to about 1/4 cup, stirring often.
  • Add the chicken broth and cherries; cook for about 5 minutes.
  • Remove the cinnamon stick, stir in the lemon juice, butter, and pepper. Remove from the heat.
  • In a small bowl dissolve cornstarch in water. Stir into the cherry sauce a little at a time.
  • Sprinkle salt and pepper over the pork. Grill over medium heat for approximately 8 minutes on each side, turning once.
  • Remove to a platter and allow to rest for 10 minutes covered with foil.
  • Slice the roast, spoon the cherry sauce over the meat, and serve.
  • You may serve the extra sauce on the side if desired.

  • Mash altogether or whip to the consisteny you desire.
  • Put in a baking dish and top with cheese and bread crumbs.
  • Put under a low broiler for 5-10 minutes, just until lightly browned.

  • Cook for 10-15 minutes, just until the carrots are crisp tender.

  • Bake for 40 minutes at 350°.
  • For frosting: cook milk and flour until smooth.
  • Beat together butter, crisco, brown sugar, and maple extract for 5 minutes. Add the milk and flour mixture and beat 5 minutes more.
  • Frost cooled cake and enjoy.

  • 6 ounces sliced turkey
  • 6 ounces sliced ham
  • leftover cranberry jelly - optional
  • 8 slices swiss, provolone or cheddar cheese
  • thin dill pickle
  • 1/2 cup soft butter
Directions
  • In a small bowl, stir together olive oil, mustard, cumin, paprika and a pinch of salt.
  • Split rolls or cut desired bread into slices (8).
  • Butter the outsides of the bread and lay out of a piece of tin foil or waxed paper.
  • Spread the inside of each roll or bread with mustard mixture.
  • Layer meats and cheese on bottom halves of rolls or bread.
  • Spread a layer of leftover cranberry jelly on top of the meat if desired.
  • Add a cheese layer and top with pickles.
  • Cover with the top halves of the rolls or bread.
  • Place on a hot skillet or pannini press.
  • If using a skillet, cover the sandwich with foil and set a heavy pan or pot on top to press down the sandwich. (Even a brick wrapped in foil makes a great press.)
  • Grill, pressing constantly and turning once, until the sandwiches are browned and crisp on both sides. (5-6 minutes per side)
  • Cut in half and serve warm.

  • Pour the dressing over it and stir to combine.
  • Salt and pepper to taste.
  • Cover and refrigerate for at least two hours for the flavors to blend.

  • 18 1/4 ounce box of German chocolate cake mix
  • 1/3 cup evaporated milk (do not use sweetened condensed milk)
  • 3/4 cup butter, melted
  • 1 cup chocolate chips
Directions
  • Preheat oven to 350 degrees F. Grease a 9" x 13" pan.
  • Melt caramels and 1/3 cup of evaporated milk over low heat in a heavy sauce pan. Set aside.
  • In a large bowl, combine cake mix, 1/3 cup evaporated milk, melted butter, and nuts. Stir by hand until just combined. Press half of the dough mixture on the bottom of the prepared baking dish.
  • Bake for 6 minutes at 350 degrees F. Remove from the oven and immediately sprinkle chocolate chips over baked crust.
  • Pour the melted caramel mixture over the top of the chocolate chips.
  • Crumble the remaining dough evenly over the top of caramel.
  • Bake for an additional 18 minutes.
  • Cool completely and refrigerate the bars before cutting into squares.

  • Combine all of the bean and corn salad ingredients together in a bowl and set aside while preparing quesadillas (may be done 1 to 2 hours prior to serving, if refrigerated).
  • Combine cooked, cubed chicken with bottled salsa, shredded greens, and cheese.
  • Divide chicken mixture evenly on 4 flour tortillas and cover with 4 remaining tortillas.
  • Coat large skillet with non-stick vegetable spray.  Cook each quesadilla over medium heat, one at a time, for approximately 4 minutes on each side.
  • Remove quesadillas and cut each into 4 pieces.
  • Serve with bean and corn salad and bottled salsa.

  • Divide meat mixture into 4 equal portions. Place each portion in 1 tortilla lined custard cup.
  • Make slight indentations in center of loaf with spoon or thumb.
  • Place in oven and bake at 350 degrees for 40 minutes.
  • Remove from oven and sprinkle each center with shredded cheese of choice.
  • Let sit 2-3 minutes. Garnish with lettuce and tomatoes.
  • *May also microwave loaves at 70 percent (med-high) 8-9 minutes, rotating cups part way through. Remove and top with cheese.

  • Remove the pan from the heat and add the muffin mix, milk, sour cream, chiles and then the egg. (Do not add the egg first or it will scramble in the hot onion mixture.) Then add half of the cheese, salt and dill.
  • Stir to combine and pour into prepared muffin tins.
  • Sprinkle the remaining cheese on top of each.
  • Bake muffins for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Allow to cool slightly before removing them from the tins.
*Note: These can also be made into a bread when baked in an 8x8 baking pan instead of muffin tins.

  • Add 1 cup of water.
  • Add the white pepper then add the seasonings of choice.
  • Then add the flour but don't let the flour burn. If it does the recipe isn't messed up; just turn the heat down mix constantly.
  • Add the milk and mustard; let the macaroni cook.
  • Now, and finally, add the creamed cheese.
  • Put the macaroni and cheese mixture in a good sized baking pan.
  • Then melt the butter and add it to a large bowl; add your breadcrumbs and mix slowly.
  • Add the breadcrumbs on top of the mixture. Then take a cooking brush and remove the little bit of butter left in the bowl and brush it on the breadcrumbs.
  • Bake for 45 minutes.

  • Remove fillets to a warm platter or individual serving plates.( See TIP ) Add wine, zest and lemon juice to skillet, raise heat to high and bring to a boil. Add cream and dill and boil until sauce begins to thicken, 1 - 2 minutes. Add salt and pepper to taste and spoon sauce over fish. Serve immediately, with lemon wedges on the side.
  • TIP: An easy way to warm plates: put them in the microwave with a small container of water. Heat for 1 -2 minutes and leave in oven until needed. Heat from the water will warm the plates. Make sure plates are microwavable, though!

Ingredients
  • 6 servings of prepared instant potatoes
  • 1 can French fried onions
  • 1 cup shredded cheddar cheese
Directions
  • Prepare the mashed potatoes. Add 1/2 can of French fried onions and 1/2 cup of cheddar cheese. Stir just until evenly distributed.
  • Scoop into a buttered baking dish, uncovered; place in an oven preheated to 350 degrees and bake for 25 minutes.
  • Remove from the oven and sprinkle with the remaining cheese. Top the cheese with the remaining French fried onions.
  • Place the potatoes back in the oven and bake for an additional 5 minutes.
  • Remove from the oven and serve while hot.

Ingredients
  • 2 cups diagonally sliced sugar snap peas (8 oz. of whole peas)
  • 7 cups thinly slice cabbage (or 1 lb. bag of preshredded)
  • 6 tablespoons buttermilk
  • 1/4 cup sour cream
  • 2 tablespoons chopped fresh dill (or 2 tsp. dried)
  • 1 clove garlic, minced
  • 1/2 tablespoon sugar
  • 1/2 tablespoon white vinegar
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
Directions
  • Rinse the sugar snap peas and then snap the stem end off the pods. Cut the pods diagonally into small pieces.
  • If using head cabbage, cut into thin slices. Place cabbage and peas into a large bowl for mixing. Toss the sugar snap peas and cabbage together until evenly distributed.
  • In a smaller bowl, add the buttermilk (shake before adding), sour cream, dill, garlic, sugar, vinegar, salt, and pepper. Whisk until all ingredients are well blended.
  • Pour the dressing over the peas and cabbage and stir until well coated.
  • Pour the cole slaw into a smaller bowl and cover with plastic or place in an airtight container. Refrigerate until well chilled. Approximately 2 hours.
  • When thoroughly chilled, the cole slaw is ready to serve.

  • 3 cups flour
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 1/2 cup cocoa
  • 2 cups water
  • 1 cup vegetable oil
  • 2 tablespoons vinegar
  • 1 teaspoon vanilla
  • FILLING:
  • 8 ounces cream cheese
  • 1 egg
  • 1/2 cup sugar
  • 1 cup chocolate chips
  • FROSTING:
  • 1 cup sugar
  • 1/3 cup milk
  • 5 tablespoons butter
  • 1 cup chocolate chips
  • 40 mini marshmallows
Directions
Preheat oven to 350 degrees. Place paper liners in muffin tins. In a large bowl, combine dry ingredients. Beat in liquid ingredients until smooth. For filling, in a smaller bowl, beat cream cheese, egg and sugar until smooth. Stir in chocolate chips.. Fill cupcake tins 1/2 full with chocolate batter. Put 1 tablespoon of filling into center of each. Place a spoonful of batter over the filling. Bake for 30 minutes. For frosting, combine sugar, milk and butter in a small saucepan. Boil for 1 minute over medium heat. Remove from heat. Add chocolate chips and marshmallows and stir until melted. Spread over cupcakes.
