Chili Verde 2 Recipe

Ingredients
  • 3 pounds pork loin roast
  • 1 bottle green salsa verde (1 to 2 16 ounce bottles)
  • 1 teaspoon chicken flavoring
  • 1 teaspoon beef or pork flavoring
  • 1 can diced green chilies (4 oz. can)
  • 2 jalapeno peppers, finely chopped
  • 2 tablespoons cornstarch
  • 1/4 cup water, cold
  • 1 can refried beans (16 oz. can)
  • 1 package Taco Blend cheese, shredded (8 ounce package)
  • Tortillas
Directions
Cut pork loin into chunks.

Spray pressure cooker with cooking spray.

Brown pork roast over high heat.

Add enough water to cover the meat chunks.

Pressure cook for 15 to 20 minutes, watch closely and cool.

Add chicken and beef/pork flavorings to taste.

Add green salsa verde (mild or hot) and green chilies.

Remove seeds and chop jalapeno peppers.

Add finely chopped jalapeno peppers.

Combine cornstarch and 1/4 cup cold water until smooth.

Add to mixture, stirring constantly.

Return to a boil; cook and stir for two minutes until thickened.

Smear a small amount of refried beans on tortilla.

Next spoon on Chili Verde.

Sprinkle on cheese.

Roll up and add more Chili Verde and cheese on top.

Notes: You can cook the meat in a crock-pot or slow cooker. I usually pressure cook mine. You want the pork to be tender and not chewy. You may need to add more or less of the chicken and beef/pork flavoring to your liking.
