Peanut Butter Dream Bars 2 Recipe

Ingredients
  • 1/2 cup chocolate wafers, finely ground inch food processor or blender
  • 1/2 cup old-fashioned oats
  • 1/3 cup confectioners sugar
  • 1/2 teaspoon Salt
  • 3 tablespoons unsalted butter, melted and cooled
  • 1/4 cup creamy peanut butter
  • 1 1/2 ounces cream cheese, room temperature
  • 2 teaspoons Vanilla
  • 2 tablespoons semi-sweet chocolate chips, melted
Directions
Line 9x4 in. loaf pan with wax or parchment paper, leaving 2 in. overhang on long sides. In medium bowl, combine ground wafers, oats, sugar, and 1/4 tsp. salt. Stir in butter until evenly moistened. Stir in 1 T. peanut butter until mixture forms large clumps. Spoon into loaf pan and press into even layer. Refrigerate about 10 minutes until firm. Meanwhile, beat cream cheese with electric mixer on medium speed until smooth and fluffy, about 2 minutes. Add vanilla, remaining 3 T. peanut butter, and remaining 1/4 tsp. salt. Beat on medium speed until pale and nearly doubled in volume, about 7 minutes. Transfer to loaf pan and spread in even layer over cookie crust. Freeze until firm, about 10 minutes. Spread melted chocolate in a thin, even layer over chilled peanut butter layer. Refrigerate until firm, about 10 minutes. When ready to serve, lift bars out of pan using wax paper overhang. Cut crosswise into 8 bars and serve cold.
