Beef Enchiladas Layered Recipe

Ingredients
  • 2 pounds ground beef
  • 1 onion, diced
  • 1 green pepper, diced
  • 1 packet taco seasoning
  • 1 can Enchilada sauce (large can)
  • 1 teaspoon chili powder
  • 1 package corn or flour tortillas
  • 1/2 pound mozzarella cheese, grated
  • 1/2 pound cheddar cheese, grated

In a skillet over medium-high heat, brown beef, onion and green pepper. Cook until beef is not longer pink; drain.

Add taco seasoning, enchilada sauce and chili powder to meat. Stir to combine.

In a casserole dish, layer tortillas, meat mixture and cheeses. Repeat until all meat mixture has been used.

Bake in 350 degree F oven until warmed through and cheese has melted, approximately 25 minutes.

Enchiladas made easy. Instead of rolling up each one individually, the tortillas are layered with the meat sauce and cheese, similar to lasagna. The flavor is delicious and everyone will love it.
