Cherry Upside Down Cake Recipe

Ingredients
2 tablespoons butter or margarine
1 pound red tart cherries well drained
1/2 cup sugar
few drops red food coloring
pinch salt
1 2/3 cups flour
1 cup Sugar
2 1/2 teaspoons baking powder
1/2 cup shortening
1/4 teaspoon lemon extract
3/4 cup Milk
1 egg
Directions
Mix in a sauce pan butter, cherries, sugar, and food coloring, melt over middle heat and spread evenly in a 9 inch pan. Mix shortening, egg, milk, and lemon extract set aside. Mix flour, sugar and baking soda, then mix the wet and dry ingredients. Pour over the cherry mixture. Bake at 350°F for 55 - 60 minutes. Turn upside down on serving plate and let set for a few minutes before serving.
