Butterfly Cake Recipe

Ingredients
  • 1 cake mix, your choice
  • 1 1/4 cups water
  • 1/2 cup oil
  • 3 Eggs
  • 1 can white frosting
  • 1 long peppermint candy stick, or 2 short sticks
  • yellow and red food coloring
Directions
Preheat oven to 350 degrees.

Spray 9-inch round baking pan with Pam. Cut wax paper to fit bottom of pan.

In mixing bowl, combine cake mix, water, oil, and eggs. Pour batter into prepared pan. Bake 30-45 minutes. Remove from pan and cool on rack.

To form butterfly:

Turn cake upside down so flat side faces up. Cut cake in half. Form a v, like a peace sign, in upper 1/3 of cake. You now have two small wedges and two large wedges. This creates the butterfly wings. Place two larger wedges on serving plate, with tips facing each other and wide side of wedge to the outside. Place two smaller wedges with tips facing center and wide sides facing to the outside. You should now have a butterfly shape. Frost top and sides of butterfly with white frosting. Divide remaining frosting into 2 bowls. Stir in food coloring to make yellow and pink icing. Place each icing in a plastic bag and seal. Snip the end off each bag to create a piping sack. Place an oval of yellow icing in the center of upper wings, smooth with a knife. Place an oval of pink icing in center of lower wings, smooth with a knife. Lay the long peppermint candy stick down the center of the wings for the body. Can sprinkle wings with colored sugar, if desired. Can also color shredded coconut and sprinkle around butterfly.
