Cajun Fudge Cake and Icing Recipe

Ingredients
  • Cake
  • 2 cups sugar
  • 2 cups flour
  • 1 stick margarine
  • 4 1/2 tablespoons cocoa
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1 teaspoon baking soda
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 Eggs, beaten
  • ICING
  • 4 1/2 tablespoons cocoa
  • 1 stick margarine
  • 6 tablespoons milk
  • 1 pound powdered sugar
  • 1 teaspoon vanilla extract
Directions
Preheat oven to 350°. Lightly grease and flour 11x16 inch pan or cookie sheet. Sift sugar and flour together. Melt margarine with cocoa, oil and water. Heat until margarine is melted and bring to a boil. Pour over sifted sugar and flour mixture. Beat well with electric mixer. In another bowl, stir together baking soda and buttermilk; Add vanilla and cinnamon. Mix by hand. Pour into flour mixture. Add eggs and mix until blended using electric mixer for this. Pour into prepared cake pan. Bake 20 minutes. Remove from oven and ice while the cake is hot. Icing: While cake is baking, place cocoa, margarine and milk in a saucepan. Heat until margarine is melted and bring to a boil. Remove from heat and add sugar and vanilla. Blend well. Ice the cake while it is still hot in cake pan. Allow to cool and cut into squares. You can put chopped nuts in icing, if you like.
