PINEAPPLE/PECAN LOAF Recipe

Ingredients
  • 1/2 cup brown sugar, firmly packed
  • 1/4 cup shortening
  • 1 egg
  • 2 cups sifted flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 3 tablespoons water
  • 1/3 cup frozen orange juice concentrate, thawed
  • 1 can crushed pineapple, undrained (8 1/2 ounce can)
  • 1 teaspoon vanilla
  • 1/2 cup chopped pecans
Directions
Cream sugar and shortening. Add egg; beat until light and fluffy. Sift flour, soda and salt. Combine concentrate and water. Add alternately with dry ingredients to the creamed mixture, stirring well after each addition. Stir in undrained crushed pineapple, vanilla and chopped nuts. Pour into a greased loaf pan. Bake at 350° for 40-50 minutes. Remove from pan immediately. Cool on rack. Makes one loaf.
