LIME SQUARES Recipe

Ingredients
  • 4 tablespoons unsalted butter
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 2 egg yolks (large)
  • 1 fat free sweetened condensed milk (14 ounce )
  • 1/2 cup fresh lime juice
Directions
Preheat oven to 350°. Brush 8" square baking dish with melted butter. Line bottom with parchment paper, leaving 2" overhang on two opposite sides. Blend butter with cracker crumbs and sugar. Press into bottom and 1/2" up sides of pan. Bake until lightly browned, 8-10 minutes. Cool 30 minutes. Whisk together egg yolks and milk. Add lime juice, whisk until smooth. Pour into cooled crust; carefully spread to edges. Bake until set, about 15 minutes. Cool in pan on rack. Chill at least 1 hour before serving. Using paper overhang, lift out of pan and transfer to cutting board. With serrated knife, cut into 16 squares. Store in refrigerator.
