Southwestern Chicken Pasta Salad Recipe

  • 1/2 pound penna rigate
  • 2 cups shredded cooked chicken
  • 1 cup corn kernels, drained or fresh
  • 3/4 cup shredded cheddar
  • 1/2 cup sliced green onions
  • 1/2 cup chopped plum tomatoes
  • 1/4 cup Fresh Orange Juice
  • 2 tablespoons fresh lime juice
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon Chipotle Chili

  • Prepare pasta according to package directions.
  • Combine pasta, shredded cooked chicken, corn, shredded cheese, onions, and tomatoes.
  • In a separate bowl, combine O.J. and remaining ingredients.
  • Drizzle O.J. dressing over pasta, combine, and chill.
