Chocolate Sandwich Cookies Recipe

Ingredients
  • 2 packages devil's food cake mix
  • 1 cup canola oil
  • 4 eggs
  • 8 ounces cream cheese, softened
Container: Cookie sheet
Directions
COOKIES:
  • In a large bowl, combine the cake mix, oil, and eggs until well blended.
  • Roll into 1-inch balls. Place 2 inches apart on ungreased cookie sheets. Do not flatten.
  • Bake at 350ºF for 8 to 10 minutes. Cool for 5 minutes before removing to wire racks. Cookies will flatten as they cool.

FILLING:
  • In a medium bowl, beat the cream cheese and butter until fluffy.
  • Beat in the sugar and vanilla until smooth.
  • Spread the filling on half of the cooled cookies.
  • Top with remaining half of the cookies. Store in the refrigerator.

Note: These cookies freeze well.
