  • 2 cups rhubarb - diced
  • 1 cup sugar
  • 1 egg - beaten
  • 2 tablespoons flour
  • 1/2 teaspoon vanilla
  • 3/4 cup flour
  • 1/2 cup brown sugar
  • 1/3 cup butter

  • Mix rhubarb, sugar, egg, 2 tbsp flour, and vanilla.
  • Pour into unbaked pie crust.
  • Mix 3/4 cup flour, brown sugar and butter until crumbly.
  • Sprinkle on top and bake at 425° F for 30-40 minutes.
