White Chocolate Macadamia Nut Cookie Recipe

Ingredients
  • 1/2 cup butter
  • 3/4 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon Salt
  • 4 ounces white chocolate inch small chunks
  • 1 package macadamia nut pieces (2 1/4 ounce pkg)
Directions
Preheat oven to 375°. Cover 2 cookie sheets with parchment paper. In a medium bowl, cream together the butter and sugar. At low speed, stir in egg and vanilla. Sift the flour, baking soda and salt together and stir into the creamed mixture. Finally, stir in the white chocolate and nuts. Roll heaping tablespoons of dough lightly between your palms and place on a cookie sheet 2 inches apart. Bake for 10-12 minutes in the preheated oven, until lightly browned. Cool on wire racks and store in an airtight container. (No calories if eaten while still warm.) You can double the amount of chocolate and nuts if you wish. Makes 16-18 cookies.
