Ingredients
  • 3 chicken breasts
  • 1/2 lime - juiced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cayenne pepper
  • 4 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon basil - fresh and chopped
  • 1 teaspoon honey
  • 1 teaspoon Herbs de Provence
  • 2 tomatoes - chopped
  • 2 cups lettuce - chopped
  • 3 pita bread - whole wheat or favorite variety
Container: grill, small bowl, baking sheet

  • Lay the chicken breasts on a baking sheet and sprinkle with olive oil, lime juice and season with salt, pepper and cayenne pepper. Allow these to sit for 5-10 minutes.
  • Heat the grill to medium.
  • Grill chicken 8-10 minutes or until it is no longer pink on the inside. Turn once half-way through cooking.
  • Meanwhile, in a small bowl, mix together the mayonnaise, dijon, basil, herbs, and honey.
  • Remove chicken from the grill and allow it to sit for 5 minutes, then thinly slice the chicken.
  • Slit the pitas in half, and spread mayonnaise mixture on the inside.
  • Fill each side with equal amounts of lettuce, tomatoes and sliced chicken.
