Swedish Pancakes 2 Recipe

Ingredients
  • 5 eggs
  • 3 cups milk
  • 2 1/4 cups flour
  • 1/4 cup sugar
  • 1 teaspoon Salt
  • 1 teaspoon vanilla
Directions
Heat griddle to highest temperature 400°. Put all ingredients in large bowl (kitchen-aide mixer works great). Mix completely with beater until lumps are out. Spoon onto griddle using ladle. Take the back side of the ladle and go in a circular motion working from the inside of the pancake out, making the pancake as thin as possible without going through to griddle. Flip when brown. You can usually cook two at a time on a griddle.
