Oat Pancakes Recipe

A hearty and delicious pancake that will entice the entire family to rise and shine for an early breakfast.

  • 2 cups milk
  • 1 1/2 cups quick oats
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 2 eggs, beaten
  • 1/3 cup oil

  • In large mixing bowl, pour milk over oats, let stand. Stir in eggs.
  • Mix dry ingredients together in separate bowl, then add to milk mixture. Stir until all dry ingredients are mixed in; stir in oil.
  • Cook on hot griddle and enjoy! Serve with your favorite pancake topping.
Note: We usually double the batch, and add 2 c of blueberries. You can also use old fashioned oats, but you have to microwave or cook the milk and oats together until very hot. Add some of that to the eggs, then pour that egg mixture back into the rest of the oat mixture. (Otherwise you cook the eggs!)

"I like to make pancakes for breakfast on the weekends so I am always looking for different recipes. This one looke pretty interesting so I tried it a few weeks ago. I made them again this last weekend because we liked their flavor and texture. They were firm but still tender."
