Blueberry Muffins 31 Recipe

Ingredients
  • 1 3/4 cups sifted cake flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup shortening
  • 1/2 cup sugar
  • 1 egg
  • 1/2 cup Milk
  • 1 cup fresh blueberries
Directions
In a small bowl combine cake flour, baking powder and salt. In a larger bowl, cream together the shortening and sugar. Beat in egg. To this mixture, add the sifted dry ingredients alternately with milk. Fold in blueberries. (The berries will blend better if they are dusted with a little of the sifted flour.) Pour into well greased muffin tin or muffin papers and bake at 375° for 20 minutes or until brown. Makes 12 muffins.
