Sour Cream Crumb Muffins Recipe

Ingredients
  • Cake
  • 3/4 cup soft butter
  • 1 cup Sugar
  • 3 Eggs
  • 2 cups flour
  • 2 1/4 teaspoons baking powder
  • 1/2 tablespoon baking soda
  • 1 tablespoon vanilla
  • 3/4 cup sour cream
  • Streusel
  • 3/4 cup flour
  • 1/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1/4 teaspoon Salt
  • 3/4 teaspoon Cinnamon
  • 5 tablespoons butter cut into small pieces
Directions
Cream butter and sugar, mix in eggs one at a time. Add vanilla. Sift together flour, baking powder and soda. Add to batter alternating with sour cream. Spoon batter into 12 large muffins cups.

Stir together flour, brown sugar, granulated sugar, salt and cinnamon. Cut butter pieces in until crumbly and no lumps of butter remain. Sprinkle evenly on top (about 2 heaping teaspoonfuls per cup. Lightly press into batter. Bake at 325° for 25 minutes or until toothpick comes out clean. Cool.

May also add 2 cups of fresh blueberries. (bake at 350° for 25-28 minutes.
