Seven Layer Coconut Cookies Recipe

Ingredients
  • cup confectioners sugar
  • cup flaked coconut
  • teaspoon vanilla extract
  • cup flour
  • 4 eggs, whites only
  • cup almonds, toasted and chopped (coursely)
  • cup semi sweet chocolate chips

  • Beat egg whites until stiff, add sugar and vanilla gradually. Add coconut and flour, mix well.
  • Stir in almonds and chocolate chips
  • Spoon onto lightly greased cookie sheet.
  • Bake at 350 degrees for about 15 minutes, or until golden brown.
  • Remove and let cool on rack.
  • *Serve warm for an extra yummy treat.
