Ingredients
  • 1 cup margarine or butter
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tarter
  • 1 cup oatmeal flakes
  • 3 1/2 cups flour
  • 1 cup sugar
  • 1 cup corn oil
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt
  • 1 cup coconut, shredded (optional)
  • 1 cup Rice Krispies cereal
  • 12 ounces chocolate chips (semi-sweet)

Directions

  • In a large bowl, combine all of ingredients.
  • Using a small scoop, drop portions of the mixture onto a cookie sheet. Leave about 2 inches between the cookies.
  • Bake 10 - 12 minutes at 350ºF.
  • Makes 6 - 7 dozen. The cookies are a bit crumbly but very good.
