Sweet Potato and Banana Casserole Recipe

Ingredients
  • 34 ounces sweet potatoes or yams (drained or vacuum packed)
  • 4 ripe bananas
  • 1 1/4 teaspoons cinnamon
  • 3/4 teaspoon salt
  • brown sugar
  • 2 tablespoons sliced almonds (or crushed nuts of your choice)
  • 1/2 cup crushed flake cereal
  • 3 tablespoons butter, melted
Container: 2 quart baking dish

  • Preheat oven to 350ºF. Lightly spray baking dish with non stick spray.
  • In a large bowl, mash the sweet potatoes and bananas. Add cinnamon and salt and mash until mixed well. Spread evenly in prepared baking dish. Cover potato mixture with a layer of brown sugar.
  • In a small bowl, mix crushed cereal, nuts and butter together. Sprinkle topping mixture evenly over casserole.
  • Bake uncovered 45 minutes.

    Optional additions: 2 tablespoons bourbon, or 1 teaspoon vanilla, or 2 to 3 tablespoons fresh orange juice.
