Oriental Coleslaw Recipe

Ramen noodles, almonds, and sunflower seeds roasted together and tossed with seasoned cabbage make this salad a favorite accompaniment to burgers. With its crunchy texture and flavorful dressing, this salad also makes a perfect side dish for any type of sandwich.

Ingredients
  • 1/2 cup slivered almonds
  • 2 tablespoons sunflower seeds
  • 3 ounces package of Ramen noodles (chicken flavored)
  • 16 ounces package of coleslaw mix
  • 4 green onions - diced
  • DRESSING:
  • 1/2 cup canola oil
  • 2 tablespoons white sugar
  • 3 tablespoons cider vinegar
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon soy sauce
  • 1 packet of seasoning from Ramen noodles

  • Preheat oven to 350 degrees F.
  • On a large baking sheet with edges, combine almonds, sunflower seeds, crushed Ramen noodles. Lightly spritz with vegetable oil spray. Roast for 10 minutes. Let cool.
  • In a large bowl, combine coleslaw and green onions. Add almond mixture and combine.
  • In a jar or small bowl, combine oil, sugar, vinegar, black pepper, soy sauce and seasoning packet from the ramen noodle mix. Whisk until thoroughly blended.
  • Just before serving, pour dressing over salad; toss to coat evenly. Serve immediately.

"We were up north with friends last week and I took this coleslaw along. I had the almonds, sunflower seeds and noodles ready, mixed the dressing up, and brought the cabbage separate. I mixed it up just before serving. Everyone loved it and it was so easy to throw together when we were ready to eat. I will do this again next year when we go."

"I brought this to my family reunion this weekend. I didn't mix it up until we were ready to eat. This is great because the dressing doesn't spoil if not refrigerated so you don't have to worry about keeping it on ice. There wasn't any left by the time I got through the line!"

"This is one of my favorite salad recipes! I always roast the nuts and noodles in a pan, but using the oven was so much easier. I forgot the spray them and it still turned out. Now if I could just keep my husband out of the crunchy topping so there's some for the salad :)"
