Pulled Pork Egg Bake Recipe

This recipe is an interesting way to use up some leftover shredded pork. It's loaded with flavor and a little different from your average breakfast casserole.

Ingredients
  • 4 eggs
  • 3/4 cup milk
  • 2 cups pulled pork
  • 1 can diced chiles (small can)
  • 1 cup shredded Monterey Jack cheese
  • 2 green onions, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • FOR GARNISH:
  • 1 cup salsa (optional)
  • 1 avocado, pitted, chopped
  • 1/2 cup sour cream

Preheat oven to 350 degrees F. Spray a square baking dish with cooking spray.

Combine eggs and milk.

Add remaining casserole ingredients.

Pour into a prepared baking dish.

Bake for 40-45 minutes.

Remove from oven, allow casserole to cool for a few minutes.

Cut into serving pieces, top with salsa, chopped avocados and sour cream.
