Ingredients
  • 1 chicken breast, boneless, skinless
  • 1 potato, sliced
  • 1/4 red bell pepper, diced
  • 1/4 onion, diced
  • 1 sprig fresh thyme
  • salt and pepper, to taste

Preheat oven to 375 degrees F.

Season chicken with salt and pepper if desired. Set aside.

Place potato slices on a piece of aluminum foil. Top with chicken, bell pepper, onion and thyme; fold foil over and seal edges securely to form a pouch.

Place pouch on a baking sheet. Bake for 20-25 minutes or until the chicken is cooked through and no longer pink in the middle.

NOTE: This can also be done on the grill over medium high heat.

"Outside of having to cook it a little longer to get the potatoes done, this was a huge hit! I will par-boil the potatoes next time and then use them. My kids loved it too, but they used carrots instead of red pepper."
