Hawaiian Sweet Potatoes Recipe

Sweet potatoes made even sweeter with pineapple and brown sugar. These will melt in your mouth. Perfect served beside your Thanksgiving turkey.

  • 6 sweet potatoes, peeled, cut into chunks
  • 1/3 cup brown sugar, packed
  • 3 tablespoons butter, melted
  • 1/2 teaspoon salt
  • 1 dash pepper
  • 1 cup crushed pineapple, undrained
  • 1 egg, beaten
  • 1 cup mini marshmallows (optional)

Cook potatoes in water until fork tender; drain and mash.

Add brown sugar, butter and seasonings. Beat until well blended. Fold in pineapple and beaten egg. Pour in buttered casserole and bake in oven at 350 degrees F for 40 minutes or until browned.

If desired, sprinkle marshmallows on top and bake 1-2 minutes until browned.

"These had good flavor. They were a little too sweet for my taste but I did like the pineapple in it. Maybe next time I will only put half of the pineapple in it. My kids fought over the marshmallows on top."
