Cauliflower Mash Recipe

Ingredients
  • 1 head cauliflower, chopped
  • 1/2 cup sour cream
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter
  • 1/4 cup Parmesan cheese, grated
  • 1 tablespoon chives, chopped

Put chopped cauliflower in a pan of water, boil for about 8-10 minutes, just until tender; drain water off.

Add sour cream, salt, pepper and butter. Mash to desired consistency.

Add cheese and stir to combine. Garnish with chives.

Enjoy the great flavor of cauliflower with this unique method of preparation. Serve as a vegetable side dish or in place of potatoes at any meal.
