TOMATO CASSEROLE 2 Recipe

Ingredients
  • 2 - 28 ounce cans of diced tomatoes , lightly drained (keep juice)
  • Ritz cracker crumbs
  • 2 cups mayonnaise
  • 1 cup cheddar cheese
  • 1 cup Parmesan cheese
  • 1/2 cup diced onions, sautéed
Directions
Mix mayonnaise and cheeses. Mix sautéed onions and tomatoes. In a lightly greased (Pam) 13 x 9 dish, put enough Ritz cracker crumbs to cover the bottom of the dish. Layer as follows: cracker crumbs, tomato/onion mixture, cracker crumbs, tomato/onion mixture. Add a little of the tomato juice over the top to keep it from being too dry. Pour the mayonnaise mixture over the last layer. Bake at 350° for about 30 minutes.
