Chicken Taco Soup 5 Recipe

Ingredients
  • 1 can tomato sauce (28 ounce can)
  • 1 can corn, drained or 1 (16 ounce pkg frozen corn (14 ounce can)
  • 3/4 cup uncooked barley, optional
  • 1 can refried beans (16 ounce can)
  • 16 ounces chicken broth
  • 1 can black beans, drained (15 ounce can)
  • 1 can kidney beans, drained (15 ounce can)
  • 1 packet taco seasoning mix
  • 3 chicken breasts, shredded or diced (large)
  • 1 can diced green chilies (4 ounce can)
  • 1 packet ranch dressing mix
Directions
Put all ingredients in large pot or crockpot. Heat to boiling. Turn heat down and simmer for 30 minutes or until barley is cooked. If using crockpot, cook for several hours. This is very filling. Serve with tortilla chips if you wish or top with sour cream and shredded cheese. You may need to add more broth, this expands as the barley cooks and becomes a thick soup.
