Carrot Salad 21 Recipe

Ingredients
  • 1/4 cup walnut pieces
  • 1 tablespoon shredded coconut
  • 2 cups grated carrot
  • 1 apple, cored and grated
  • zest and juice of 1/2 lemon
  • 1/2 cup orange juice
  • 1/2 cup currants or raisins
  • 1 1/2 teaspoons grated fresh ginger
  • dash of salt
Directions
Toast walnut pieces and coconut in a low 300° oven. The walnuts will take about 10 minutes and the coconut takes about 5 minutes. Chill. Combine grated carrots, apple, lemon zest, orange and lemon juices, currants/raisins, salt and ginger. Add walnuts and coconut. Serve. Makes 3 cups.
