Hamburger Vegetable Soup 5 Recipe

  • 2 pounds ground beef
  • 3 quarts water
  • 2 tablespoons beef bouillon
  • 1 package dry onion soup
  • 1 cup diced potatoes or frozen hash browns
  • 3/4 cup Minute Rice or barley
  • 1 can tomato juice
  • 1 can each peas, corn carrots and green beans
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon basil
  • 1/2 teaspoon thyme
  • 1/2 teaspoon oregano
  • 1/4 teaspoon dill weed
  • 1 bay leaf
Brown and drain ground beef. Add water and bring to boil. Add bouillon and dry soup, potatoes, rice or barley and seasonings. Simmer until nearly done, then add drained canned vegetables. Simmer until hot. Remove bay leaf. I also add celery. This recipe makes just over 1 gallon.
