SPINACH & EGG SALAD Recipe

Ingredients
  • 1 pound spinach
  • 6 eggs
  • 1 tomato
  • 3 slices french bread
  • 1 clove garlic
  • 1 or 2 ounce parmesan cheese
  • 1 bar butter (1/2 cup)
  • 3 tablespoons olive oil
  • 1 tablespoon wine vinegar
  • salt and pepper
Directions
Boil the eggs until firm. Rub the sliced bread with the minced garlic and stir fry in a pan with the butter. Cut the tomato in cubes. Add them in a salad bowl with the spinach. In a bowl mix the olive oil, vinegar, salt and pepper. Pour over the salad. Add the croutons, eggs and parmesan on top of the salad.
