Latin Cole Slaw Recipe

Ingredients
  • 1 cup finely chopped cilantro
  • 1 red bell pepper
  • 1/2 cup olive oil
  • 4 lemons, juiced
  • 1 dash salt
  • 1 head cabbage, shredded or coleslaw package mix. (large head)
  • 1 cup Chopped Tomatoes
Directions
Place the cilantro, red pepper, olive oil, lemon juice, and salt in a food processor, and process until cilantro and pepper are finely chopped.

In a large bowl, gently toss the cilantro mixture, 1/2 cabbage, and tomatoes. Refrigerate at least 1 hour before serving. Right before serving add the rest of the cabbage and toss.
