Potato Soup 66 Recipe

Ingredients
  • 1 pound Bacon
  • 4 cups Potatoes, peeled and diced
  • 1 onion, chopped
  • 1/2 cup butter
  • 3/4 cup flour
  • 4 cups milk
  • grated cheese
Directions
Fry bacon until crisp. Crumble and set aside. In pan with bacon grease cook onion until transparent. In large pot add potatoes, onion and enough water just to cover potatoes. Boil until potatoes are tender. Meanwhile, melt butter in skillet; then add flour and stir until smooth. Cook about 1 minute. Add milk to butter/flour mixture very slowly stiring well with each addition until smooth. Add this mixture to potatoes. Add more milk if you like thinner soup. Just before serving add reserved bacon, Garnish soup with grated cheese
