Gluten free Sweet Potato Waffles Recipe

  • 1 cup brown rice flour, or garbfava flour
  • 1/2 cup potato starch
  • 1/4 cup tapioca flour
  • 2 teaspoons baking flour
  • 1/2 teaspoon Salt
  • 1 teaspoon cinnamon
  • 1 tablespoon sugar
  • 1/2 teaspoon xanthan gum
  • 2 tablespoons cooking oil
  • 1 cooked sweet potato (mashed to yield 1/2-3/4 cup) (medium)
  • 1 1/4 cups milk (cow, rice, or soy)
  • 1 teaspoon vanilla
Combine dry ingredients. In separate bowl, whisk together oil, sweet potato, milk, and vanilla until smooth. Mix liquid into flour mixture until just combined. Cook on waffle iron as usual. Sweet potatoes are very nutritious, and high in fiber. These waffles are delicious-you will never miss the gluten!
