Slow Cooker Ham Cassoulet Recipe

Ingredients
  • 1 pound dried navy beans or great northern beans, rinsed
  • 4 cups chicken broth
  • 2 cups chopped onions
  • 1 cup wine or water
  • 6 cloves garlic, smashed
  • 6 sprigs fresh thyme or 1 teaspoon of dried
  • 2 bay leaves
  • 1 teaspoon ground pepper
  • 1 can diced tomatoes inch juice (14.5 ounce can)
  • 2 cups sliced carrots
  • 2 cups cubed ham
  • 1/2 cup chopped parsley
Directions
Soak the beans overnight in water. Drain the liquid. Cook the beans in a slow cooker on low with everything except the carrots, ham and parsley for 7 hours. Then add the carrots and ham and cook for another 5 hours. Stir in the parsley right before serving.

Makes approximately 8 main course servings.
