Slow Cooker Ham Cassoulet - Recipe

Soak the beans overnight in water. Drain the liquid. Cook the beans in a slow cooker on low with everything except the carrots, ham and parsley for 7 hours. Then add the carrots and ham and cook for another 5 hours. Stir in the parsley right before serving.

Makes approximately 8 main course servings.

-1 pound dried navy beans or great northern beans, rinsed
-4 cups chicken broth
-2 cups chopped onions
-1 cup wine or water
-6 cloves garlic, smashed
-6 sprigs fresh thyme or 1 teaspoon of dried
-2 bay leaves
-1 teaspoon ground pepper
-1 can diced tomatoes inch juice (14.5 ounce can)
-2 cups sliced carrots
-2 cups cubed ham
-1/2 cup chopped parsley
