Crab meat AuGratin Recipe

Ingredients
  • 1/2 cup onion, chopped
  • 1/2 cup green onions, chopped
  • 1 stick butter
  • 1/2 cup flour
  • 1 can evaporated milk (12 oz can)
  • 2 Egg Yolks
  • 1 teaspoon salt
  • 1/2 teaspoon red pepper
  • 3/4 teaspoon black pepper
  • 1 package grated Cheddar cheese (8 ounce pkg)
  • 1 pound crabmeat (crawfish or shrimp work equally well)
Directions
In 10" pan, sauté onions in butter over medium heat. Blend in flour, stirring well. Gradually pour in milk, stirring constantly. When well blended, add egg yolks, salt and peppers. Cook on low for 5 minutes.

Put crab meat in a mixing bowl. Slowly pour the above sauce mixture over the crab meat and blend well. When thoroughly mixed pour into a lightly greased casserole dish. Sprinkle with cheese. Bake in preheated 375° oven for 10-15 minutes or until lightly browned.

Note: Egg substitute and low fat milk and low fat cheddar cheese may be used to lower fat and calories.
