Ingredients
  • 1 pound macaroni-style pasta (tube pasta, such as macaroni, cavatappi, or penne)
  • 3 cups milk
  • 1 cup heavy cream
  • 6 tablespoons flour
  • 6 tablespoons butter
  • 1 cup shredded Cheddar cheese
  • 1 cup Mexican shredded cheese
  • 1 package Asiago, Romano, or Parmesan cheese
  • salt and pepper to taste

  • Pre heat oven to 350 degrees F.
  • Butter the bottom and sides of the 9 x 13 baking dish.
  • Cook and drain the pasta; rinse.
  • Heat butter and flour until dissolved. Pour in cold milk, heat until thick and bubbly.
  • Add heavy cream, cheeses, salt, and pepper. Mix until cheese is melted.
  • Mix cheese mixture with the pasta and pour into the prepared baking dish. Bake for 20-30 minutes or just until bubbly. Do not over bake.

"This macaroni and cheese dish had great flavor but I thought it was just a little dry. Maybe I baked it too long. I seemed fine when first out of the oven but seemed to dry out as it sat. I will definitely make again but probably won't add quite all the pasta and bake for a little less time."
