Ingredients
8 pieces curly edged lasagna noodles
1 package chopped spinach, chopped
1/2 cup shredded carrots
1 1/2 cups Ricotta cheese
1/2 teaspoon Salt
1/4 teaspoon pepper
1/8 teaspoon nutmeg
1 egg, beaten
1/4 cup Parmesan Cheese
1 jar spaghetti sauce (15 3/4 ounce)
Directions
Cook noodles as directed. Drain spinach. Mix spinach, carrots, ricotta cheese, salt, pepper, nutmeg, egg and 2 T. Parmesan cheese. Spread spinach mixture onto noodles and roll-up. Place in baking dish. Pour sauce over and sprinkle with remaining Parmesan cheese. Bake covered at 350° for 35 minutes.
