I don't know what the restaurants do with the name and substitutions but if you mention walleye pikes around here no one would think anything of it. Anyway, I enjoyed the information on this page. "It is northern pike, not pike, and it is walleye, not walleye pike or walleyed pike as you have it. Walleye pike was a name used on restaurant menus in the past so that they could freely substitute either northern pike or walleye depending on what they had available that day."
