Grandma's Zucchini Bread or Muffins Recipe

Ingredients
  • 3 eggs
  • 1 cup oil
  • 2 1/4 cups sugar
  • 2 cups shredded zucchini
  • 3 teaspoons vanilla
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 teaspoons cinnamon
  • 1/4 teaspoon baking powder
Directions
  • Beat eggs until light in color.
  • Add sugar and beat until thick and lemon-colored.
  • Add oil; beat well.
  • Add zucchini and vanilla.
  • Sift together dry ingredients.
  • Blend well.
  • This makes about 3 small loaves of bread.
  • Grease and flour pans.
  • Bake at 350° F for 1 hour, or less.
  • Set timer for 45 mininutes and watch closely for the last 15 minutes.
  • Don't over bake.
  • For muffins, line muffin pans with paper liners.
  • Bake for 40 minutes or until done.
  • Makes 28 muffins.
