Vegetable Medley 9 Recipe

Ingredients
  • 2 yellow squash, sliced
  • 2 zucchinis, sliced
  • 1 onion, chopped
  • 2 cloves garlic, Crushed
  • 1 green bell pepper, chopped
  • 1 tablespoon olive oil
  • 1 ounce can diced tomatoes
  • Dried basil
  • Dried oregano
  • Salt and pepper
  • Grated Parmesan cheese
Directions
Sauté squash, zucchini, onion and garlic in olive oil until soft. Add tomatoes and juice. Add seasonings to taste. Transfer to glass baking dish. Bake at 325° for 20 minutes. Sprinkle with cheese and bake another 10 minutes. Serves 6.
