Vegetable Medley Recipe

A flavorful vegetable casserole that makes a nice side dish for any meal. This casserole is easy to throw together and can be made with your favorite vegetables. The fried onion add a little crunch to12 the texture.

Ingredients
  • 1 pound frozen broccoli, cauliflower, & carrots (or any combo of frozen vegetables desired)
  • 1 can cream of mushroom soup
  • 1 cup shredded cheese (your choice)
  • 1/3 cup sour cream
  • 1/4 teaspoon pepper
  • 1 can fried onions (2.8 oz. can)

  • Combine vegetables, soup, 1/2 cup cheese, sour cream, pepper, and 1/2 can onions.
  • Bake for 30 minutes at 350 degrees.
  • Remove from the oven and top with the remaining cheese and onions; bake for an additional 5 minutes or until fried onion rings are lightly browned.

"This was a different way of fixing vegetables from what we are used to. We thought it was very good. The fried onions gave it great flavor and a little crunch. This was a simple dish to make up also."
