Quick Chili Recipe

  • 3 pounds lean ground beef
  • 2 cups chopped onion
  • 1 each green and red bell pepper (1 cup each)
  • 3 garlic cloves, pressed/minced or equivalent
  • 3 tablespoons chili powder
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1/2 teaspoon crushed red pepper
  • 1 tablespoon ground cumin
  • 1 tablespoon sugar
  • 2 teaspoons salt
  • 2 - 16 ounce cans whole tomatoes, undrained
  • 1 can tomato sauce (16 ounce can)
  • 1 can tomato paste (6 ounce can)
  • 4 - 15 ounce cans red kidney beans, drained & rinsed
Brown beef- drain fat. Add onion, peppers and garlic. Stir in spices and mix well. Cook until onions are tender. Combine everything. Heat to boil then simmer for 30-40 minutes.
