CHUNKY CHICKEN VEGETABLE SOUP Recipe

Ingredients
  • 1/2 pound boneless skinless chicken breasts, cut into bite-size pieces
  • 1 teaspoon oil
  • 1 can chicken broth (14 1/2 ounce can)
  • 1 1/2 cups water
  • 2 cups assorted fresh vegetables (sliced carrots, broccoli florets, chopped red peppers)
  • 1 envelope Good Seasons Italian Dressing Mix (0.7 ounce envelope)
  • 1/2 cup instant white rice, uncooked
  • 2 tablespoons chopped fresh parsley
Directions
Cook and stir chicken in hot oil in large saucepan on medium-high heat 5 min. or until chicken is done.

Add broth, water, vegetables and dressing mix. Bring to boil. Cover, simmer on low heat 5 min.

Stir in rice and parsley. Remove from heat. Let stand, covered, 5 min.

Suggestion: Add in egg noodles as well; Use different varieties of frozen mixed vegetables; Use pre-cooked chicken strips chopped into pieces.
