Easy Vegetable Soup 2 Recipe

  • 3 tablespoons olive oil
  • 3 stalks celery, chopped
  • 1 onion, chopped (1 1/2 cup) (medium)
  • 1 package chicken broth (32 ounce pkg)
  • 2 cups beef broth
  • 1 can diced tomatoes ,with juice (14 ounce can)
  • 1 can vegetable or tomato juice (11.5 ounce can)
  • 1 cup whole-wheat penne pasta, uncooked
  • 2 cans mixed vegetables, with liquid (15 ounce cans)
  • 1 can sweet white corn, with liquid (15 ounce can)
  • 1/2 teaspoon basil
  • pinch of salt and pepper
This recipe is great for children to make with adult help. Place oil in a large pot over medium heat. Cook celery and onion for 7 to 10 minutes, until Tender. Add both broths, tomato, and vegetable juice. Bring to a boil, then add pasta. Reduce heat to low and simmer for 20 minutes. Makes 10 servings.
