Ingredients
  • 1 cup frozen corn kernels
  • 1 cup canned black beans
  • 1 cup canned diced tomatoes
  • 1 tablespoon fresh cilantro, finely chopped
  • 1 tablespoon fresh squeezed lime juice
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
Directions
Defrost corn and drain. Drain beans and tomatoes. Combine in a medium sized bowl with lime juice and cilantro.

"We like our salsa spicy so I used a can of Rotel Diced Tomatoes & Green Chilies instead of diced tomatoes as suggested by "Savory". I used my own frozen corn because I had some leftover from our meal the night before so this recipe was super simple. We really liked it with the spice Rotel tomatoes."
